
Recipe: Turkey Fajitas

Ingredients:
- 1 lb. boneless turkey breast
- ¼ tsp. ground black pepper
- 1 clove plus ¼ tsp. garlic, minced
- 1 tsp. chili powder
- 2 Tbsp. lime juice
- 3 Tbsp. fresh cilantro, chopped, divided
- 1 Tbsp. oil
- 1 cup tomato, chopped
- 1 Tbsp. red onion, chopped
- 10 7-inch flour tortillas
- 3 cups lettuce, shredded
- ½ cup light sour cream
Directions:
- Sprinkle turkey with pepper, 1 clove minced garlic, chili powder, lime juice, 1 Tbsp. cilantro and oil. Turn to coat. Cover and marinate in refrigerator at least 3 hours.
- To make salsa, combine tomato, 2 Tbsp. cilantro, onion and ¼ tsp. garlic in a small bowl. Let stand 1 hour.
- Broil turkey 6 inches from heat for 10 minutes on each side. Meanwhile, wrap tortillas in aluminum foil and place in a warm oven for 8 minutes. Transfer turkey to a cutting board and cut into strips. In each tortilla, wrap 1 ½ oz. turkey, 1 ½ Tbsp. salsa, 1/3 cup lettuce and 2 tsp. sour cream.
