Crisp and Creamy Shrimp Salad with Creamy Lime Dressing

Ingredients

  • 1 Tablespoon vegetable oil
  • 1 lb. shrimp, peeled and deveined
  • 1 head Romaine lettuce, shredded
  • 1 cup peeled and diced cucumber
  • 1 cup Creamy Lime Dressing (see recipe below)

Directions

Heat oil in a large skillet over medium-high. Add shrimp and stir until opaque, about 3 minutes. In a large bowl, toss shrimp, lettuce, cucumber, and dressing until evenly coated with dressing. Serves 6.

Creamy Lime Dressing

Ingredients

  • 1/3 cup vegetable oil
  • Juice of 1 fresh lime (about 3 Tablespoons)
  • 1 teaspoon lime zest
  • 4 ounces cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar

Directions

Place all ingredients in a blender and blend until smooth. Makes about 1 cup.
