Pork with Glazed Plums

Ingredients

  • 1 ¼ pounds pork tenderloin
  • ¼ teaspoon ground pepper
  • 1 Tablespoon olive oil
  • ½ red onion, sliced
  • 2 medium plums, quartered
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons plum preserves
  • ¼ teaspoon dried thyme

Directions

  1. Preheat oven to 400 degrees. Sprinkle pepper on pork. Heat oil in a large ovenproof skillet and cook pork on high for 3-4 minutes until brown on all sides. Add onion and plums. Bake for 15 minutes or until it reaches 145 degrees in the thickest part.
  2. Transfer to a serving platter. Add vinegar, preserves, and thyme to drippings in the pan. Cook for 3-5 minutes over medium-high heat until slightly thickened. Pour over pork and serve. Serves 5.
